Yakhni Pulao

Tomorrow is Sunday and you are thinking what will be your superstar Sunday menu.Well,don't worry.....today I am going to make an awesome mughlai pulao.....again in a very simple way.Check the ingredients....

Ingredients:
Chicken - 500gm ( you can also use mutton instead of chicken)
onion- 4
ginger-2 tbsp
garlic- 8
tomato-1 (big)
Basmati rice- 2 cups
bay leave- 2
clove-2
whole black pepper - 4
cardamom- 2 (elaichi)
cinnamon stick- 2
saunf- 1 teasp
haldi- 1teasp
chili powder- 1 teasp
oil
ghee
salt to taste

Method
For Yakhni:
Take onion(2 piece crushed),ginger(1tbsp),garlic(4),clove,whole black pepper,cardamom,cinnamon,saunf together and make a potli with a clean piece of cloth.
Now cut the chicken into big pieces(biriyani like pieces_.
Put chicken pieces and potli in a pressure cooker and add 6 glass of water and add little salt.
Place the lid and cook it in medium flame.Wait for two whistle.Don't open immediately.
Now separate chicken pieces from the stock.Squeeze the potli to extract all the garam masala juices.
Yakhni stock is ready.

Now heat the pan and put 2 tbsp oil and add bay leaves.
Now add sliced onions(2) and fry untill it turns soft.
Now add ginger-garlic(the rest part of them) paste and fry for 2 minutes.
Add chopped tomato and fry well.
Then add haldi and chili powder in it and the add add chicken pieces.cook for next 2 minutes in medium flame.
Now add rice and again fry them together for 2-3 minutes.
Add salt and little ghee.
Shift all the ingredients to a pressure cooker.
Now add Yakhni stock into in.(remember for 2 cups of rice,4 cups of water is required.so please measure yakhni stock with a cup,then add.if you find that yakhni stock is not sufficient ,then you can add water with it.)
Add ghee(2tbsp).
Place the lid and wait for the first whistle.remove the heat but donot open the cooker.
Wait for next 15 minutes.
Open and feel the heavenly aroma of Yakhni Pulao.
